Est. at 275°F · plant-based pâtisserie

Haute
pâtisserie,
honest macros.

A protein cookie composed like a dessert course — twenty grams of plant protein, baked low and slow in our Omaha bakehouse, and kept cold like anything precious. No whey. No shortcuts. No apologies to ordinary cookies.

la carte

A tasting menu,
in three acts.

Each cookie is a complete, macro-balanced course. Eight dollars seats you at the table. The chef recommends all three.

I

Choca Cran — Dark chocolate + tart cranberry

Choca Cran.

$8

dark chocolate + tart cranberry

Dark chocolate falls for a sharp little cranberry in the first act. Oats and flax stabilize the chemistry. The meet-cute happens at 275°F.

II

Chocmondu — Dark chocolate + almond

Chocmondu.

$8

dark chocolate + almond

Dark chocolate plays the smooth operator. Almond slivers provide the shoulder pad. Dressed up in allulose and agave — the clean kind of indulgence.

III

Drama in the PBC — Peanut butter + chocolate

Drama in the PBC.

$8

peanut butter + chocolate

Peanut butter and chocolate walk into a kitchen. Sweet potato shows up for substance. Twenty grams of plant protein cue the curtain call. You leave the snack drawer in a love triangle.

❦

The menu changes when the kitchen says so. The macros never do.

l'atelier

No factory.
A bakehouse.

Sheet pans, not conveyor belts. Every batch is mixed, topped and pulled by hand in Omaha — whole cranberries pressed in one at a time, almonds laid like shingles. Shot on location, because it exists.

275°F, low & slow

Gentle heat keeps the plants acting like plants. Nothing scorched, nothing shellacked.

Small batches

The oven fits what it fits. We bake to the pan, not to a forecast.

Chickpeas, oats, real chocolate — a short list you can read aloud without stumbling.

l'intérieur

The crumb
is the résumé.

Break one open and the argument makes itself: dense, moist, visibly full of oats, fruit and nuts. Twenty grams of protein has never looked less like a supplement — because it isn't one. It's dinner-party proof that a meal can wear a cookie's clothes.

notes from the kitchen

Three things it refuses to be.

*

Not a protein bar.

No whey, no soy isolate, no candy-bar gymnastics. Just legumes, seeds, oats, and a little theatrical chocolate.

**

Not a regular cookie.

A regular cookie is a sugar crash in a crumb coat. This is a complete, macro-balanced meal you can eat with one hand on the steering wheel.

***

Not a cold brick.

We bake at 275°F to keep nutrients intact, then cold-ship so texture survives the trip. Your cookie arrives chewy, not shellacked.
